Strength, Dexterity, Constitution, Intelligence, Mentality, and Luck. 

Like DND?

Str = Affects defense in all classes, primary stat for the Knight and Templar, for whom Strength also affects damage. If an item has a low damage score and a minor bonus to Strength, the math says the better choice is the higher damage weapon without a bonus to Strength.
Dex =Affects Hit Rate % and Critical Evade %. Primary stat for Thief and Ranger, as Dexterity also affects their damage output.
Con = increases HP, no big surprise
Int = increases Max Magic Critical and Magic Resistance. Primary stat for Magician and Priest, as Intelligence affects their base Magic Points and damage.
Men = Affects Max Restoration, which seems to be the HP / MP restore speed
Luck = This hidden stat affects item drop rate, type or quality of item dropped. The forum thread also says it affects the "Chaos Item Success Rate." I'll take their word for it. The thread also gives a formula for determining your Luck stat: 

"Go to main menu- ranking you can see Character and Enchant score.
Character score = main character total EXP + 6 stats total and square + all characters(Your 5 + members' 5) total equipment score
roll stats until you like, get in the game, don't do anything except drop your equipment and record your 5 stats even, like 15 or 16, that means you roll the best stats, go back to ranking see the Character score is 8000-9500 then you luck will be 15+." 

Ethers- Use them the same way as scrolls. Unequip the item you wish to enchant and drag the ether on top of the item. Items can have a single ether and scroll enchantment. Ether effects don't stack. 

Scrolls- To use a scroll on an item, you need to unequip the item, then drag the scroll on top of the item. Scrolls offer enhancements and spells to put on items. Scroll and ether effects stack. 

 You get quests from strange people who put yellow exclamation points over their heads. Sadly, their grammar is questionable and their punctuation erratic. I will try my best to not correct it. I do not guarantee this, as I usually do the quest transcriptions once a week, hours at a time. I've broken the quests down in to level segments based on my game play. The breaks are not exact, meaning that you can be level 22 by the end of the 10 to 20 section. I try not to break up the quest storylines.
